Comfort Food Recipe at its Best…Sloppy Joes!

Something New! A family favorite recipe each month.

This is a favorite at our house.
Serves 3-4 people, depending on your self-control.

There are a few variations because some of the members of our household are vegetarians.
Simple and easy, this takes just 10-15 minutes to prepare and another 25-30 minutes to cook.

Ingredients:

1 pound of ground beef (or 1 lb of a ground meat substitute. Ex: chopped seitan.)
1/4 cup of diced green pepper
¼ cup of diced celery
1/2 cup of diced yellow onion
3/4 cup of ketchup
1/8 teaspoon of Tabasco (hot sauce) *Can be omitted, or increased, depending on your taste!
¼ cup of water
1 tablespoon of Worcestershire sauce.
½ teaspoon of black pepper

What to do with all of the ingredients:

In a skillet or sauté pan on medium heat, brown the ground beef being sure to break it up into small pieces. After it’s browned, add all the vegetables, ketchup, hot sauce, water and Worcestershire. Mix well, cover, lower heat to simmer and cook for 25 minutes.

One variation for vegetarians is to sauté the vegetables first in one tablespoon of your choice of oil. After 5 minutes, add the meat substitute and cook for 5 more minutes then add the rest of the ingredients. Mix well, cover, and simmer for 15 minutes.

Serve over your choice of bread, hamburger roll or even pasta. A side salad or green vegetable rounds out the meal perfectly.
